Lamb’s Devilled Kidneys Recipe. I’ll Stick to St. John, thank you

Just before Christmas, all  of a sudden, I had a kidneys craving. It was ironic as in October I’d suffered with a terrible kidney infection which had sent me rushing to A&E, off sick from work for a week, tending to myself with two lots of antibiotics and codeine (which I promptly put to the back of the medicine cabinet when I read how addictive they can be).

I have no idea where this sudden rush came from. In an ideal world, I wanted to have it at St. John or a similar restaurant but I instead decided that I would try cooking it. Off I went to Tesco, purchasing TWO packs of lambs kidneys. I read various recipes and settled on my trusted chef Nigel Slater, who had a great but simple recipe of devilled kidneys.

Early December I had another date in my calendar which I was very much looking forward to. Dinner at Chanelle’s House. She had sent us the menu in advance and I had starved eaten very little that day.

Sunday Dinner Recipe | Slow Cooked Sweet Spiced Lamb Shanks

I fancied something different for Sunday dinner today, so when I went to the supermarket yesterday my eye wandered over the lamb section. I then remembered a recipe I had jotted into my iPhone notes that I wanted to try. I had everything the recipe called for apart from lamb and lager (yes! lager).

No prep required as far as marinating goes – which was good because I went out with Cupcake Chen last night and stayed at her house. So I got in today at 4pm and pretty much started cooking. The recipe calls for a solid 2.5 hours in the oven – great time to catch up on my phone calls and wash my hair. Hell I even had dinner before 8pm tonight, that my dears is a first. I’m sitting here at almost 10pm wondering what to do with all this time I’ve gained back. I’m on a #winning streak.
