Tuesday Night Dinner – River Cobbler Fish with Olives, Chimichurri and Mashed Potatoes

5 Nov

Last night I had a very simple dinner. Vietnamese River Cobbler which I’d bought from Tesco (where else?) and had in my freezer.

I defrosted it in the fridge, slapped on some chimichurri sauce that I’d found in my fridge and olives. I served this with mashed potatoes.

If you’ve never had or made Chimichurri sauce before – it’s very easy and can be stored in the fridge for a couple of weeks.

It’s traditionally served with steak but I think it works with everything. I combined two recipes found here:
http://www.chow.com/recipes/28393-argentine-chimichurri-sauce and here http://www.bbcgoodfood.com/recipes/2195652/steak-with-chimichurri-sauce.

My mash is simple: potatoes, splash of milk, salt and pepper, wholegrain mustard and my secret sauce (yes of course I’m going to send you to my employers website – DUH – http://www.tesco.com/groceries/product/details/?id=276877604)

Oh yes I sprinkled some olives over the fish – how could I forget that? They took absolutely forever to de-pip – next time I’m buying pitted olives *looks at sore fingers*…
