#MeatlessMonday – Pan-Fried Cod and Prawns

So, I was on the phone gassing to my friend Simone last night and she asked me “what are you having for dinner?”

“Well…” I replied.

“You know how I like a fad…?”

“A what?” She asked

“A fad.”

“What?”

“fad”.

“What? Sad?”

“No, Fad. F.A.D”

We continued this for around 30 seconds.

“FAD Simone. F for foxtrot. A for apple. D for delta”

Finally she got it.

“Well today is meatless Monday” I told her.

“What? Monday is meant to be for Sunday leftovers”. Simone informs me.

“Well I didn’t have any leftovers from my Sunday dinner. One piece of chicken which isn’t going to feed Sam AND me”

Anyway once we said our goodbyes I created this Monday dinner. I was pretty impressed. It tasted great (and before any of you question it, you CAN have fish on Meatless Monday.

Cod, prawns, capers and black olives in a tomato and garlic based sauce. I served it with rice. It was pretty darn good.

Simone was probably right calling me sad.
