Recipe | Easy Dinner on Monday | Beef Chilli with Kidney Beans

Last weekend I decided to get ahead of myself and cook dinner for Monday so that I could go to the gym after work and still have a good nutritional dinner after.

I came across a recipe for “Game Day Chili” (yes, spelt like that). Named so, I assume, as it’s the perfect thing to cook if you have a lot of hungry men to feed whilst they watch the game. It’s easy, filling and can be served by itself, with tortilla chips or rice. Simples.

The “chili” turned out well, and bear in mind I cooked this on Sunday for Monday’s eating… You know anything that takes a long time to cook always tastes good the day after it’s made!

Easy Chilli for Monday Dinner

500g ground beef

1 onion, diced

3 cloves garlic, crushed

1 400g tin kidney beans, rinsed and drained

1 400g tin diced tomatoes

1 chopped red pepper (I used orange, no biggie)

about 200ml chicken or beef stock

freshly ground salt and pepper (season to taste)

1 tsp chili powder

1 tsp of paprika

1/4 tsp cumin seeds

1/4 tsp cayenne pepper

1/4 tsp cinnamon

40g dark chocolate

It couldn’t be any simpler;

1. In a non-stick dish, brown the beef over medium-high heat. Remove from the heat reserving the juice/fat in the pan for you to cook the rest of the ingredients. Gently fry the onion and garlic in the until soft, about 6 minutes. Add the browned beef, kidney beans, tomatoes, stock, seasoning, chilli powder, cumin seeds, red pepper, cinnamon, and chocolate. Simmer on low heat for 1 hour. To be honest, the longer the better. I added it to the oven while I was cooking my roast dinner and let it cook for three hours. Serve with rice for a quick and easy Monday dinner. Who wants to cook on Mondays?

      Really good. Chocolate and chilli tastes so good together and as Serena said, really compliments Jacket Potato too. Going to team it with that next time I make it.
